Place chicken in a large ziplock bag. In a bowl, whisk together honey, soy sauce, rice wine vinegar, garlic, ginger, brown sugar, and sesame oil.
Pour the marinade over the chicken, and seal the bad, squeezing out all the air.
Move the chicken around in the marinade until it is evenly coated.
Refrigerate for at least 30 minutes and up to 24 hours.
Grill, pan fry, or bake the chicken until it reaches 165ยบ F.
Let chicken rest, tented in foil, for 5 minutes before serving.
